Have you seen some of the cards made by the Everything is Rosey Medley?  Let me show you some.

I think the top right card is my personal favorite of these four.  The flowers and leaves are all layered together for a perfect floral bouquet.  Everything is Rosy is only available during the month of May and that is ending very soon.

So, I tried a new recipe this week.  My family loves gnocchi, especially Megan.  Do you know what gnocchi is?  It's soft mini potato dumplings. I usually serve it with my spaghetti sauce and have even tried browning it as a side dish.  

I found this recipe on Pinterest (of course) and had to give it a try.  It's a different take on gnocchi that I've never tried.  My family liked this recipe and would want me to make it again.  It would make a great dinner at college for my girls.  Easy, quick and could have 2 dinners from this one recipe.

One thing that was great with this recipe, it that it only takes 15-20 minutes to make!! How great is that when you have a long day at work.  It's kind of like a one pot casserole.  

Cheeseburger Gnocchi

• 1 tablespoon butter
• 1 (16 oz) package potato gnocchi
• 1/2 lb lean ground beef
• 1 teaspoon salt
• 1 teaspoon pepper
• 1/2 teaspoon smoked paprika
• 1 teaspoon cumin
• 1 teaspoon mustard powder (optional)
• 2 cups diced onion (about 1 whole onion)
• 3–4 cloves garlic, minced
• 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
• 1 cup beef broth (or water)
• 1/4 cup heavy cream
• 1 cup shredded sharp cheddar cheese
• 1/3 cup thinly sliced scallions

1. Melt butter in a 12-inch skillet over medium-high heat. Add gnocchi in a single layer and cook on one side for 2-3 minutes until browned and toasted. Shake the pan to toss the gnocchi and continue cooking for another 2-3 minutes, tossing occasionally, until both sides are toasted. Remove gnocchi to a plate and set aside.
2. Turn the heat to high and return skillet to stove. When the pan is very hot and smoking, add the beef and season with salt, pepper, cumin, paprika, and mustard powder if desired. Add the onion and garlic, and cook, stirring occasionally, until beef is browned and onions are golden. Drain if necessary.
3. Add the tomatoes, broth, and gnocchi back into the skillet. Stir to combine. Bring to a boil, then cover, reduce heat to medium-low, and simmer for 5 minutes until the gnocchi is tender and liquid is mostly absorbed.
4. Off heat, then add the cream and 1/2 cup cheese and stir to combine. Top with remaining cheese and scallions. Place the skillet under the broiler in the oven until cheese is browned and bubbly, about 3 minutes. Serve and enjoy!!

One ingredient I added was a 4 oz can of tomato sauce and then adjusted the seasonings to compensate for it.  This made the dish more creamy.

In case you are wondering, you can find gnocchi in the pasta aisle.  Not in a box, but usually in a plastic pouch-like packaging.  You also might be able to find it in the refrigerated pasta section.  You could also try to make it.  I tried once and it didn't turn out and haven't tried it again.  There are tons a recipes on Pinterest if you are ambitious enough to try it.

When people hear about stamping, the first thing that comes to their mind is cards, especially birthday cards.  They bring joy to everyone who receives a card.  It's way more personalized than any store bought card can ever be.  They are also one of a kind. We can CASE as much as we like, but more than likely, we always tweek things to our preferences.

Second, and very close behind, is scrapbooking.  I have always looked at this hobby as a way of preserving my children's childhood.  It's a never ending job trying to keep up on all those memories.  

Stamping can also be used in home decor.  Several years ago, I did a Paper Pumpkin kit that included the cutest white picture frame.  I got bored with what was in there and it's been sitting empty on my counter.  It was way over due for a make-over.

The flowers are from the Everything is Rosy bundle.  First I chose some colors that work good together.  Random colors.

I didn't plan anything.  Sometimes I work best when I just stamp and cut out some images and randomly place them on the background.  Kind of like a jigjaw puzzle, but the pieces don't have a definate place.  Keep moving around, layering until you like how the results.

I stamped the "Amazing" from othe Incredible Like You stamp set.  As usual, I stamped it after all the flowers and leaves were glued on the base.  For the record, I don't recommend doing it that way.  Luck was on my side.  The base and stamp were lined up with the Stamparatus.  Very carefully, I colored  just  the "Amazing"  from the stamp.  It took several tries but it stamped perfectly.  Whew.  Next time, do it first.

This little picture will be going back in my stamp room.  Not empty this time.

I guess I could call today a productively lazy day.  Somethings got done, but should have gotten more done.  It took my husband 3 times to mow the lawn today.  Twice while he was mowing, it just started to downpour rain.  It would not last long, but enough for it to be frustrating for him.  For me, it was kind of comical, but I wouldn't let him know that!

These hedgehogs are so cute and I will so miss them!  Normally, I don't go for cutsey stamps like this, but I couldn't resist them.  Now they are off to a happy retirement.

If you can see, the hedgehog on the right is actually stamped on the Whisper White that is on the inside of the card.  If properly positioned, he fits perfectly.  It takes patience to get him right.  I had adhered the two DSP and Gray Granite pieces together and just placed them on the card front, where it will eventually get adhered.  Put the actual stamp on the front and place the circle framelit around him.  Mark the spot and cut out the circle with the Big Shot.  Re-align the pieces again on the card front, mark the spot and then cut the actual card front.  When you then adhere the pieces together, just line the circle up and it should be good.

Take a peek at the inside.  I couldn't resist stamping a few flowers.  

I'm a sucker for lining things up, so if you notice the Whisper White is in line with the Gray Granite. I lined it up and then adhered it to the inside of the card.  All of isn't very hard, just take your time and it will work.

It was great having a day off!  And it was even better because the weather cooperated.  It was gorgeous today.  I only wish it would stay this temperature all summer long.  Upper 70s, sunny and a slight breeze.  Perfect in my eyes.  There was a few errands I had to run and then just stuff around the house. 

The best thing was that I was able to video with Megan today!  She's in Vienna, Austria until tomorrow.  I felt bad because it was was raining all day for her.  Not much fun sightseeing in the rain, but she made do. It won't stop her too much. 

We made this card last night at club.  I wasn't too excited over this hummingbird, but it has definately grown on me.  It's perfect to color using the Stampin' Blends or even the watercolor pencils.  

Instead of the normal card fold, I added another score on the front to create this extra flap.  Just score on the 1 1/2 inch line.  The front square is adhered to this flap by using Tear & Tape.  I was afraid regular Snail wouldn't be strong enough.  

The floral piece is vellum from Floral Romance DSP.  My first card I adhered the vellum directly to the Fresh Fig.  After letting it dry overnight, I could till see the Fine Tip Glue line.  Yuck!  That wouldn't do.  So, I added the Whisper White underneath. It covered the glue lines and you can definately see the flowers better.  

Take a look at the whole card when it is open.  I added the two leaves on the inside so it wouldn't be too bare.  This was a fun card to make.  I will miss this hummingbird and flower.

What a crazy time right now.  Feels like I'm going ten different ways at once and no time to finish anything.  I can't wait for things at work to be done.  Tomorrow I have my stamp club.  I'm always so glad to see my ladies.  

We are making this card in club tomorrow night.  It's going to be a Retirement Club theme.  The Hanging Garden Stamp Set and the Berry Burst color are both retiring.  

The card is all about the Stampin' Blends.  I used the combos of Granny Apple Green, Crumb Cake and Bermuda Bay.  For the Berry Burst, I just used the regular marker.  That color just had to be included with the flowers.  

This is a classic example of a simple card.  Two stamps, some coloring, embellishment and done.  It would take about 15 minutes to duplicate this card.  What kind of simples cards do you make?  I would love to see some!

On our vacation, we decided to visit Amsterdam, Holland. It was tulip season so we just couldn't resist going there.  And boy, was it worth it!  The tulips were absolutely beautiful and in full bloom.  Keukenhof Gardens is the garden to visit if you want to see the tulips.  There were absolutely thousands of tulips throughout the garden.  They have created varieties of tulips that I have never seen before in my life.  Here are just a few pictures.

Believe it or not, these are all tulips.  This is just a very small sample of the pictures I took.  Everywhere you looked, it was a picture perfect.  If you love flowers, especially tulips, this should be on your bucket list.

In Amsterdam, many people are Dutch.  When I think of cookies, I remember the windmill cookies with the slivered almonds.  The cookie was plain and simple, just flavored with different spices, no frosting.  My dad was a lover of these cookies.  

I found this recipe on Pinterest, and made them for Alyssa's graduation party.  She loves her books and her cookies.  We did a cookie bar based around some of her favorite books.  One favorite book was "The Fault In Our Stars".  In it, the characters went to Amsterdam.  Home of the Windmill cookies. 

Dutch Windmill Cookies

• • 1 lb butter or margarine

  • 1/2 c dairy sour cream

  • 4 tsp cinnamon

  • 1/2 tsp cloves

  • 2 c brown sugar, packed

  • 1/2 tsp

    baking soda

  • 1/2 tsp nutmeg

  • 5 c all purpose flour

  • 1/2 c chopped nuts or sliced almond

Mix butter, sugar and sour cream. Add dry ingredients. Mix well and form into rolls and wrap in plastic wrap. Refrigerate overnight. Slice 1/4 inch thickness or a little more. Place on greased cookie sheet.
Bake at 375^ for 10-15 minutes.
If rolling out for cookie chill in refrigerator for at least 30 minutes. Dip cutter in flour and cut in desired shapes. and bake.

These cookies were really good. I haven't made them since, but they would be worth making again.  Alyssa ended up really liking them.  And they were pretty easy to make which I really liked.  I did the sliced version, not the cookie cutter.
