Tasty Thursday - Shrimp and Rice with Herbs

What do you want for dinner?  Do you get that too?  It is so very frustrating.  Especially when trying to come up with a special dinner, say for a birthday.  Nothing I suggested for Megan did she care for, but at the same time, didn't give me any ideas of what she wants for her dinner.  Ugghhh.  

So, I came up with a few ideas found on Pinterest and made her decide.  She does like. Middle Eastern food, so I started there for something different.  She also likes shrimp and seafood.  After rejecting the first couple, she was mildly interested in this recipe.  

As it turns out, this is more Persian than  Middle Eastern.  Oops.

Shrimp and Rice with Herbs (Meygoo Polo)

1 cup Basmati rice rinsed (or brown rice)

​½ cup brown basmati rice rinsed (or white rice)

½ cup quinoa or white/brown rice

1 teaspoon salt adjust as needed

3 tablespoons olive oil

1 onion large, chopped

4 cloves garlic large

1 red bell pepper thinly sliced

1 tablespoon curry powder

1 teaspoon red pepper flakes adjust to taste

½ teaspoon turmeric

½ teaspoon ground cumin

½ teaspoon ground black pepper

1 cup cilantro chopped

½ cup dill chopped

½ cup green onions chopped

¼ cup fenugreek leaves chopped or ¾ tablespoon dried

1 pound raw shrimp cleaned and deveined

2 tablespoons lemon juice

⅓ teaspoon saffron powdered and dissolved in 2 tablespoons hot water

Instructions

COOK RICE

  • Bring 3¼ cups water to a boil. Add ⅔ teaspoon salt and 1½ tablespoons olive oil. Add the brown rice first. Lower the heat, place a lid and let it simmer for about 20 minutes.

  • Then add quinoa and white basmati rice to the same pot. Cover and let it all simmer till the grains are well done (approx. additional 20 minutes).Tip: If you are not sure of the cooking times for rice and quinoa, then check instructions below for cooking them separately.

COOK SHRIMP

  • Heat 1½ tablespoons olive oil at medium setting in a cooking pot. Add chopped onions and sauté few minutes.

  • Then add grated garlic and continue to sauté until the onions are light golden brown. Add sliced red bell pepper and sauté. Next, add shrimp and sauté for a minute.

  • Then add curry powder, red pepper flakes, turmeric, cumin, black pepper, ⅓ teaspoon salt, the herbs, and stir it all.

  • It should need only a total of 4 to 5 minutes, until the shrimp start changing color and curl a little bit. Pick out the shrimp and set it aside. Tip: Do not over cook the shrimp.

ASSEMBLE SHRIMP AND RICE

  • Place the rice-quinoa mixture with the sautéed onion-herbs mixture in several alternating layers in a heavy bottomed cooking pot. Sprinkle lemon juice and saffron water over the final layer.

  • Raise the heat to medium high for about 10 minutes and then reduce it to low setting and simmer for about 20 minutes or more until the steam builds up well. Once the rice is ready, turn off the heat.

  • Gently serve the rice in a serving dish and arrange the shrimp all over. Garnish with fresh herbs.

This recipe really did take a while to make so be prepared for that.  This dish reminded us of paella.  The rice on the bottom of the pot was a little crunchy brown, but not burned.  Just the way paella should be.  

I actually did use all the different grains, brown rice, basmati rice and quinoa.  Shocker for me.  We didn't feel the brown rice made much difference, but we did like the quinoa in this dish.  

My family would want me to make it again.  Megan did enjoy her birthday dinner after all.

Color Challenge #1

This past weekend was City Wide Rummage Sale in Fort Atkinson.  Megan is looking for a coffee table for her new apartment so we thought we would go and try to find one.  First of all, should have know the weather would be rainy.  It usually is for City Wide.  Second, we don't go very often and of course, this time, there was very few rummage sales.  We were shocked.  On our block corner, there can be up to. 15 sale signs alone.  This time, maybe 4.  We were so disappointed.  At least it's not a necessary item, just a want.  We will keep looking.  

So, once a month, my up-line challenges us to use certain colors in a card, any way we want.  It's a challenge we don't have to participate in, but it's kind of fun. Last month was:

 

Now, be honest.  Would you normally put these three color together?  I'm not sure I would have on my own.  Here's what I made.

Not too bad.  I'm kind of liking the colors together.  

I used the Honeybee Home Stamp Set and the coordinating dies.  The flowers are stamped in Memento Black and colored using the Stampin' Blends, the light shades.  Smooth coloring with the blends, and no ugly lines.  

Because of the bees, I just had to use the Hive embossing folder.  It goes with the bee theme.  Plus, I like it.

Diorama Card for my Daughter's Birthday

Happy Memorial Day Weekend.  

Besides the wind, it was a beautiful weekend for us.  Alyssa came home for the weekend and that always makes me happy.  But, it was also Megan's Birthday on Saturday.  It's hard to believe my baby is no 24 years old!  Where did that time go?  It seems like just yesterday, she was just starting dance classes and fighting with her sister.  

Of course, I have to make them their birthday cards.  They actually seem a little disappointed if I don't.  And that does make me feel good.

Megan does love vacations at the beach, so I tried to replicate a beach sunset.  And of course, she's holding a glass of wine, possibly a red  Sangria.  She does love a good Sangria.

I used blends to color the girls from In the Moment stamp set.  For around her, I used Watercolor Pencils, both sets and a blender pen.  I wanted her to stand out and the scenery to fade behind her.  

For the first time, I used the Layering Diorama Dies.   I honestly do not remember ordering them so I figured it was about time to use them.  I went with the same colors used on the background, Balmy Blue, Flirty Flamingo and Daffodil Delight. 

Take a peek at the layers.  Think I used enough dimensionals?  They were used between every layer.  Megan did notice how thick her card really was!  It wouldn't be one to send through the post.

I don't have the exact dimensions on this card, or also the instructions.  I was kind of in a hurry to make it.  Below, you can see most of the products used in making the card.  Sorry, if I missed one or two.

Hello with Sensational Swirls

Today was a completely low key day for me and I loved it.  I finished cleaning up after some co-workers and I celebrated a college graduation.  With the rainy weather, it was a perfect day to sit and read.  So, that's what I did.  Even going in my stamp room didn't inspire me so I gave up on that.  I keep telling myself, it's ok to have a day like this every once in a while.

This card was actually made quite a while ago, and I just never posted it.  It's the perfect post for a rainy day.  There are ten colors in this card!  I don't think I have ever used this many colors in a single card!

Unfortunately, some of the colors have already retired.  Sorry about that.  But it was easy enough to substitute another color in their place.  Being stampers, we can be creative and improvise when needed right?

Did you know the small flower in the Sentimental Swirls stamp set also coordinates with the bloom in the Strawberry Builder punch?  WooHoo!  Love it when things have multiple uses.

Five Bottles sitting on a Card

It's  actually kind of chilly this weekend!  I was almost glad to put on jeans for work this morning and tempted to have hot coffee instead of iced.  But at least the sun was shinning today.  

I love these bottles!  This was an easy way to show my club people all the new In-Colors.  I made two of each color, but changed the orientation.  Take a look.  Which do you prefer - horizontal or vertical?

For each color of the base, I colored the edges with the brushes with the same color.  I also used dimensionals on the same color bottle.  Anything to highlight the individual color.

Did you notice the pearls?  There are no In-Color pearls offered in the catalog.  Here's another highly kept secret.  

Got Blends? 

The blends markers will color the pearls to look like they were made that way.  You must use the Blends markers.  They are alcohol based and the color will stick to the pearl.  Regular Stampin' Write markers will not work.  Make sure you always color on the packaging.  Also, they dry almost instantly so you don't have to wait to transfer them to a card. 

Isn't that a fabulous tip?!  I've known about it, but stupid me, keep forgetting to make my own pearls.

Starry Sky Tumbler

I kept telling myself - NO you don't need another waterbottle. 

We have plenty. 

And that part is the truth.  

I lost the argument.  

But isn't it pretty?!  The color looks a little purple, but it's the Starry Sky color.   I love the glimmer look.  It just came today with my club orders.  I washed it and can't wait to use tomorrow.  

The tumblers come in all the new five In-Colors.

Honey Bee Snack

Yesterday was a day of work for me around the house.  I spread 30 bags of mulch, planted flowers, cut out some railroad ties and replaced them with couple hundred pounds of decorate stone.   Needless to say, by the end of the day, I was DONE.  My family knew better to ask what was for dinner, besides the few leftovers that were in the fridge.  I suppose after work I have to do some grocery shopping and actually make dinner.  I'm so not inspired to make anything at all.

We made these cute little treats at club this month.  It was made purposely to match the  honeybee card we also made.

I really wanted some honey sticks that are seen at farmer's markets.  Unfortunately, I didn't think of this project sooner and couldn't find them anywhere around town.  Not even Bit of  Honey candy was found.  So, I ended up with these granola bars. At least the flavor was Oats and Honey.  So, the theme did fit.

The base was embossed with the Hive 3D embossing folder, brushed some color around to give more dimension to the honeycomb detail.  Make sure when adhering the ends together, use Tear & Tape.  Other adhesive will only temporarily hold it together, but the Tear & Tape sticks forever. 

Parakeet Party was used for the tag.  Love the contrast between the two greens. I used up some gold ribbon.  Black would have been better, but I ran out at my club.  

The honeybee was exactly the one I made for the card using the Ladybug Builder Punch.  

The "For you" was from the retired What's Cooking stamp set.  If you have another set that has something similar, use that.  Look at the Christmas stamp sets.  That's the best place to find a stamp like that.
