TastyThursday - Apple Pie Oatmeal

Ok, this is now going to be super short.  I was almost done with my blog post, doing the last things and somehow I hit a button and poof!  it was gone!  I'm sooo ticked off right now.  It's 10:00 and let's see how fast I can re-do this post.

I make this oatmeal several times week and what I love is that it fills me up.  I'm not starving an hour after I eat it. Actually,  fills me up until lunchtime.

Apple Pie Oatmeal

1 apple, cored and diced, skins left on

1 cup water

1/2 cup quick cooking oats

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Bring the water to a boil.  Add the apple, oats, cinnamon and nutmeg.  Cook 2-3 minutes, stirring occassionally.  Serve with a splash of milk or a sprinkle of brown sugar if you choose to.

Now,  here's my version - Cheryl's Apple Pie Oatmeal

1 apple, cored and diced, skins on

1/2 cup quick cooking oats

1 water

4-5 shakes Penzey's Pie Spice

dash of vanilla

sprinkle of Zing Baking Blend

Add together the apple and water, bring both to a boil.  Add the oats, vanilla, Zing and Pie Spice.  Cook 2-3 minutes, stirring occassionally.

In the original recipe, I felt like the apples weren't cooked and were pretty crunchy.  Bringing them to a boil with the water really helps to soften them up nicely.  I also prefer to start withna softer apple, like a Macintosh.

I'm a Penzey's Spice fan.  The Pie Spice has multiple spices mixed together in one jar.  I just sprinkle some over and done.  The Apple Pie Spice is also really good.  For me it's just easier to add from one jar than multiples. If you don't have Penzey's spices just go with whatever you like.   Vanilla...well it makes just about everything taste better.

The Zing Baking Blend helps add a little bit of sweetness, but is better than plain sugar.  Just sprinkle some over the oatmeal for however sweet you want the oatmeal to be.  I actually add more Pie Spice than I do Zing.

Now, there's two versions of pretty much the same recipe.  Give them both a try, then come up with your own.  Makes thing more fun this way!
