Tasty Thursday - Roasted Mushrooms with Garlic and Tyme

Happy Thursday!  Today was the start to my weekend.  It started off with three appointments, but if you take a day off from work, might as well make the most of it.  Tomorrow I'm helping at a rummage sale in Johnson Creek.  If you are local and looking for some great craft items, go check it out at 203 Shepard St., Johnson Creek.   There is at least 5 demonstrators that are in on this sale and boy, the garage is full.  There are tons of Stampin' Up! items, plus some other items too.  Come by and say Hi!

I tried a new recipe for mushrooms this week.  They turned out pretty good, maybe a touch bit too lemony, but otherwise I would make them again. I try to eat low-carb so this was a pretty good side choice.  Besides the mushrooms, I typically have everything on hand all the time.  Nothing special needed.  Love those recipes!

Roasted Mushrooms with Garlic and Thyme

16 even-sized open cup mushrooms, stalks cut level

3 tablespoons olive oil or vegetable oil

2 cloves garlic, finely chopped

3 tablespoons unsalted butter, softened

2 tablespoons fresh thyme, chopped

1/2 teaspoon garlic powder

5 tablespoons fresh bread crumbs

1 1/2 tablespoon lemon juice

salt and pepper to taste

Preheat oven to 400F.  Lightly fry mushrooms, cap side down, in hot oil for 2-3 minutes.

Arrange mushrooms in a 9 x 13 oven proof pan with stalk facing upwards.

In small bowl, mix together the softened butter, tyme, garlic, seasonings and lemon juice.

Spoon a little garlic butter on each mushroom.  Gently press bread crumbs on top.

Either refrigerate for later use, or bake immediately for 15 minutes or golden brown around the mushroom cap.

Just thinking about it right now, top off with Parmesan cheese would also be great.  Think I will have to try that next time.  Even my husband like them.  

Megan's coming home this weekend!  We haven't seen her since Good Friday, waaay toooo long.  It'll be good to have her home.  One main reason to come home is she wants to see Avengers with her dad. I'm going, but it's more about those two.  Alyssa already saw the movie in Germany.  She found a theater that showed it in English, even though it was in 3-d.  A girl's gotta do what a girls's gotta do.  All she was saying was...OMG. We got reserved seats for the 3:15 show tomorrow.  I'm pretty anxious to see what happens!
