Tasty Thursday - Lemon Grilled Chicken

Happy Thursday!

We like to marinade and grill our chicken in the summer.  Problem is that with all the bottled marinades, the chicken would burn before it was fully cooked.  The marinades contain so much sugar which is causing the chicken to burn.  We got sooo frustrated.  

Somehow, I received this recipe in the mail.  Don't know how, but also, don't care.  It's really good.  The chicken is very moist and doesn't burn on the grill!!  

You are supposed to marinade the chicken for 30 minutes, but we always do it longer.  Can't hurt it. 

Another positive is that it calls for normal, everyday ingredients that you will have in your kitchen.  Score!  This is our go-to recipe for chicken marinades.

Lemon Grilled Chicken

1 lemon

2 tablespoon olive oil

1 clove garlic, crushed

1 tablespoon chopped fresh parsley

1/4 teaspoon dried thyme

1/4 teaspoon dried marjoram

1/4 teaspoon salt

1/4 teaspoon black pepper

4 skinless, boneless chicken breasts

Use a peeler to remove strips of zest from half of the lemon, then trim into fine strips with a small knife.  Reserve and set aside.  Grate the other side of the lemon to make 1 tablespoon zest.  Finally, squeeze the juice from the lemon into the bowl.

In a large bowl, combine the lemon zest and juice, oil, garlic, parsley, tyme, marjoram, salt and pepper.  Add the chicken breasts to the bowl and spoon the marinade over the chicken until well coated.  Cover with plastic wrap.  Chill for 30 minutes or overnight if you have time.

Prehead the grill to medium heat.  Put the chicken piece on the grill, reserving the marinade.  Cook the chicken until cooked through, about 10 minutes on each side.  Brush with reserved marinade 2-3 times during cooking.  Sprinkle with reserved lemon strips and serve immediately.

 

We do add the lemon zest, but do not always do the lemon strips.   Adding a little bit extra lemon juice helps the flavor too.  Dried parsley can easily be substituted for the fresh which is what we do. 

So, there are a few things to do instead of just opening up a bottle.  I think this takes 5-8 minutes to put together.  To have a better marinade is so worth the little extra time.
