Tasty Thursday - Grinder Sandwiches

Grinder sandwiches is basically a hot ham and cheese sandwich that is elevated to the next level. I've been making these for years.  My family loves them.  They are also pretty easy to make which I love.  

They were dinner tonight for my daughter and husband and do you think I would have taken a picture?  No.  Thought about it when I started this post.  Sorry.  If you google it, I'm sure there will be a picture somewhere.  Pinterest has everything.

I can actually say that I have no idea where the actual written recipe went to.  I'll give the quantities that I know best, but it also varies depending upon your tastes and the size of the rolls. Hint:  I sometimes "wrap" the cheese up in the ham to prevent it from escaping the sandwich while baking.  

Ham and Cheese Grinders

4-6 deli club rolls

1 pound ham lunch meat (we love Ham off the Bone)

Provolone Cheese, sliced

pesto sauce

sauted onions and garlic (Optional)

Slice the rolls in half and hallow out the top half of the roll.  This leaves more room in the roll for the ham and cheese.  Spread some pesto on the bottom half (or add the sauted onion and garlic)

Add at least 2 slices of ham and some cheese.  Adjust the ratios to your preferences.  Wrap the sandwiches in aluminum foil.  Bake 425 for 20 minutes.

That's it.  Nothing else to them, but they are really good.  The pesto makes all the difference.  My husband prefers his with Pepper Jack cheese.  The leftovers are really tasty too.  Did you happen to notice the bake temperature and time?  I have made it the same as frozen french fries.  Now I like easy dinners, and you can't get much easier than that.  This was a go-to dinner when the girls were younger and I didn't have a lot of time to make dinner.  Easy to make ahead of time and just bake at dinnertime.
