Tasty Thursday - Glazed Carrots

Carrots are one veggie that often gets overlooked, I believe. We eat raw carrots and dip, Yum.  You can't go wrong with anything as long as there is Ranch dip. Or they go very well with peas.  Peas and carrots go well together.  They bring so much color to foods like fried rice.

I don't know many people who eat just plain cooked carrots.  I couldn't say why, but I wanted them as a side dish, with no other vegetables.  It was a weird "craving", if that's the word I'm looking for.  Anyway, this is the recipe I found on Pinterest.

Glazed Carrots

2 lbs Carrots washed and peeled​

1/2 cup Brown Sugar

​1/4 cup Butter

​1/2 tsp Salt

​1 1/2 cup Water

  • Slice the carrots into 1/2? thick slices and place them in a large skillet. Add the water to the skillet. Cover and medium high heat until the carrots are simmering.

  • Continue to cook over medium heat for approximately 8-10 minutes or until the carrots are tender.

  • Drain off any excess water.

  • Then stir in the brown sugar, butter and salt. Stir to coat the carrots in the butter and seasoning.

  • Cook for an additional 4-5 minutes until the sauce has formed and thickened some.

  • Serve warm and enjoy!

We all enjoyed this version of cooked carrots.  Definitely better than just plain cooked carrots.  They were just a little sweet.  So, I would cut back a little on the brown sugar.  Instead of 1/2 cup, maybe try 1/3 cup.  

I would also recommend using "real" carrots, the kind you have to cut and peel, not the baby carrots.  They don't have as much flavor as the "real" carrots.  

This would be a great side dish for those Thanksgiving dinners coming up.  It would be so easy to make ahead and just heat up that day.
