Tasty Thursday - Homemade Marshmallow Coffee Creamer

I do like coffee.  But it cannot be black.   Skim milk makes it turn gray.  

There hasn't been any new kinds of creamer that even sound remotely interesting to try.  And there even less sugar free ones too.

Thank goodness for Pinterest.  

I found this recipe and thought to give it a try.  I don't have much to lose.  Only a few bucks and my time.  Marshmallow is not usually a go to flavor for me, but I'm getting almost desperate right now.

Homemade Marshmallow Coffee Creamer

  • 1 1/2 cups half-and-half or heavy cream
  • 1 1/2 cups milk
  • 1/2 cup sugar
  • 1 7.5 ounce container marshmallow creme
  • 1/2 teaspoon vanilla extract

Instructions

  • In a medium saucepan, heat your cream and milk over medium-high heat.

  • When the milk mixture is hot, but not boiling, add your sugar and stir to combine.

  • Add the marshmallow creme, a little at a time, whisking to combine until smooth and creamy.

  • Remove mixture from heat and add in the vanilla extract. Stir to combine.

  • Pour into a container, and refrigerate until you are ready to use it. This can be stored in the refrigerator for up to 4 weeks.

I had to add a little more than usual, but I did get the marshamllow flavor.  The recipe was super easy to make and didn't take long for it to cool down so I could have my coffee.  I'm a fan of vanilla, so I would add more next time.  Yes, I'll try this again.
