Tasty Thursday - Cinnamon Biscotti

Biscotti goes very well with coffee.  Like they were made for each other.

I've made this biscotti recipe several years now for my coffee friends.  For Christmas, we will have a Sunday where we all share little handmade gifts.  No, I don't know what that will be yet.

So, we have to have something special to eat as well. Just goes without saying.

Cinnamon Biscotti

Cinnamon Biscotti
6 Tbs Butter
3/4 C Sugar
2 Eggs
1 tsp Vanilla
2 C Flour
1 tsp. Baking Powder
1 tsp. Cinnamon
1/2 C White Chocolate Chips
1/2 C Chopped Pecans

Cream the butter and sugar together. Then add the eggs and vanilla and mix.  Add in flour, baking powder and cinnamon until mixed well. Gently mix in the pecans and chocolate chips. Divide the dough in half and form into 2 logs. Bake at 350 for 30 minutes. Let them cool for 15 minutes. Then slice the logs diagonally. Lay the pieces flat and bake for another 20 minutes. Enjoy!

Personally, I don't care for my biscotti super hard.  So, I don't always put them back in for the second bake, or at least not the entire 20 minutes like it calls for.  But, it's just my preference.  Once dunked in the coffee, they soften up very quickly.
