Tasty Thursday - Blueberry Cobbler

I've been busy working on swap cards this week.  They are finally done and ready to go.  I participated in four categories 

  1. Clean & Simple
  2. Christmas
  3. Fun Fold
  4. Over the top

I'll start showing  them next week.  The Over the Top was the one that killed me.  I don't want to post them too early so the other swappers don't get a head's up.  I'd hate to spoil the surprise too much.

I suprised my family with a homemade Blueberry Cobbler.  This week I was able to go get 5 pounds of​ blueberries from my peach truck.  Except for Megan, we all love them.  I wash a bunch of them and throughout the day, I grab some for a snack.  Yum.  

Blueberry Cobbler

1/4 pound (1 stick) butter, melted

1 1/4 cups plus 2 tablespoons sugar

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

2 cups fresh blueberries, rinsed and patted dry

Preheat oven to 350 degrees. Grease a 3-quart baking dish. In a medium bowl, whisk 1 cup of the sugar with the flour, baking powder, salt and milk. Whisk in the melted butter. Pour the batter into the baking dish. Sprinkle the blueberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the top. Bake for 45 minutes. Sprinkle the remaining 2 tablespoons of sugar over the top and return to oven; bake 10 more minutes.

Chris and Alyssa were in heaven.  And it was still slightly warm when we eat it.  Even better.
