Tasty Thursday - Angler's Delight

Any special plans? Megan want to do something, but we haven't decided what exactly. We have thought about maybe visiting a few winerys or brewerys. Maybe dinner out on Saturday. Maybe grab Alyssa in Madison and make her go with us. Who knows!
This recipe I've actually forgotten about! I was going through some old cookbooks, ready to purge and I came across this one again. So happy to find it on Pinterest, so out went the cookbook.
Typically I don't cook fish much at home. Only because of the lingering smell. Doesn't mean I don't like it though! And this recipe had a lot of flavor. It's the taco seasoning. The recipe says to cook the fish on the stove top, but I would definately try it in the air fryer.
Angler's Delight
- 6 haddock or cod fillets (6 ounces each)
- 1/2 cup lime juice
- 1/2 cup all-purpose flour
- 2 tablespoons taco seasoning
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3 tablespoons canola oil
- In a 13-in. x 9-in. baking dish, arrange fish in a single layer. Pour lime juice over fish. Let stand for 15 minutes. Meanwhile, in a shallow dish, combine the flour, taco seasoning, cumin and cayenne. Remove fillets from juice and pat dry with paper towels; discard lime juice. Coat fillets with flour mixture.
- In a large skillet, cook fillets, in batches, over medium-high heat in oil for 6-8 minutes on each side or until fish flakes easily with a fork.
